Caramelized Onion and Goat’s cheese Tarts
Serves 2-4

Ingredients
- 3 large onions
- 1 tsp thyme
- 1 tbsp olive oil
- 1 tbsp sugar
- 1 tbsp finely chopped parsley
- salt and pepper to taste
- cocktail tarts, canapes or crackers
- 100 grams goat’s cheese
Directions
In a skillet heat oilve oil. Slice onions in thin slices. Add onions and sugar at the same time. Add salt, pepper thyme and saute until onions caramelize and become golden. Spoon the mixture and add it to cocktail tarts, canapes or crackers. Garnish with goats cheese and serve. You could also use Gorgonzola cheese if you wish to in place of goat’s cheese.
