		<description><![CDATA[Our next important herb for Italian cooking is Thyme.]]></description>
			<content:encoded><![CDATA[<p>Thyme is also another important herb in Italian cooking. The leaves are green and roundish. The dried leaves look curled and are brown in color. Thyme has a warm and plungent flavor and fragrance. Unlike some other Italian herb it does not have an overpowering flavor, it blends with the flavor of the dish. Thyme is one of the herbs which retians almost all the flavor even after it is dried. 1/3rd of dried thyme is equivalent to 1 part of fresh thyme.</p>

			<content:encoded><![CDATA[<p>The simplest way to use boiled Chickpeas is to soak them for a few hours and then boil them. Someimes when we need chickpeas suddenly the fastest short cut takes about 45 minutes. Heres the trick, soak the chickpeas in luke warn water for 10 &#8211; 15 minutes. Next put them in a pressure cooker with a pinch of soda bicarb. Boil for 20 minutes or until you hear 3 whistels. Once done get off the flame and let the cooker cool. Open and your chickpes are ready to use!</p>

<p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p>

<li>1 cup sugar</li>
<li>1/2 cup heavy cream</li>
<li>1 tbsp butter</li>
</ol>
<p><strong><span style="text-decoration: underline;">Directions:</span></strong></p>
<p>In a thick bottomed saucepan heat sugar until melted. Make sure it doesn&#8217;t burn.  Once the sugar has melted, add butter and cream. Be careful while doing this as it might be really hot. Some solid sugar pieces might get formed  when you add butter and  cream, don&#8217;t worry about it, keep boiling the mixture until all the sugar pieces have melted. Serve hot or cold!</p>

<p>Preparation time 30 minutes</p>
<p>Cooking time 45 minutes</p>
<p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p>
<p>For Dhanshaak:</p>
<ol>
<li>1/2 cup spilt pigeon pea (toovar dal)</li>
<li>1/2 tbsp green gram (moong dal)</li>
<li>1/2 tbsp red lentil (masur dal)</li>
<li>1/2 tbsp lablab beans (val dal)</li>
<li>1 small potato, diced</li>
<li>1 small brinjal, diced</li>
<li>2 tomatoes, diced</li>
<li>1  cup fenugreek leaves</li>
<li>2 onion, chopped</li>
<li>2 cups chopped pumpkin</li>
</ol>
<p>To be ground into paste:</p>
<ol>
<li>2 kashmiri chillies</li>
<li>2 green chillies</li>
<li>4-5 cloves garlic</li>
<li>1/2 inch ginger</li>
<li>1/2 inch cinnamon</li>
<li>3-4 cloves</li>
<li>1/2 tsp peppercorns</li>
<li>2 cardamoms</li>
<li>2 tsp corriander seeds</li>
<li>1 tsp cumin seeds</li>
<li>1 tbsp fresh corriander, chopped</li>
<li>1/2 tbsp fresh mint leaves, chopped</li>
<li>1 tbsp fresh coconut</li>
<li>1 tsp sambar masala</li>
<li>1 tsp calrified butter (ghee) for frying</li>
<li>salt to taste</li>
</ol>
<p>For Rice:</p>
<ol>
<li>1 cup rice (uncooked and soaked in water)</li>
<li>1 tsp clarified butter (ghee)</li>
<li>1 onion, finely chopped</li>
<li>2 tsp sugar</li>
<li>1 inch cinnamon</li>
<li>2 cloves</li>
<li>1 tsp peppercons</li>
<li>1 tsp cumin seeds</li>
<li>salt to taste</li>
</ol>
<p><span style="text-decoration: underline;"><strong>Directions:</strong></span></p>
<p>Mix the dals and wash them. Drain the water. In a pressure cooker add the dals and all the vegetables. Add 4 cups of water and boil the mixture for 10 &#8211; 15 minutes. Once done cool and blend. Make the paste using above paste ingredients. In a wok heat the ghee and fry the paste. Now add the blended dal mixture. Season with salt . Boil well.</p>
<p>For rice heat ghee in a wok, add sugar and caramalize it. Make sure you dont burn it or it will taste bitter. Then add cumin seeds and onion. Fry until the onion is translucent. Next add cloves, cinnamon, peppercorns. Once done add the uncooked rice. Drain the water from it before adding the rice. Fry the rice for 2 minutes. Next add enough water for the rice to cook.</p>
<p>Serve the Dhanshaak and Brown Rice hot with Papad and a slice of Lemon.</p>
