Herbed Dip
Serves 2 – 4
Preparation time 1 hour
Cooking time 10 minutes
Ingredients
1 and 1/2 cup curd (yoghurt)
2 tbsp finely chopped fresh parsley
2 tbsp finely chopped fresh celery
2 tbsp finely chopped fresh basil
2 tsp finely chopped greens of spring onions (scallion)
1 tsp minced garlic
2 tbsp parmesan cheese
salt to taste
Directions
Drain all the water from the curd by tying it up in a muslin cloth or leaving it in a a stainer for an hour. Once all the water is drained out remove the hung curd and mix chopped basil, parsley, celery, greens from spring onions, minced garlic, parmesan cheese and salt. Chill and serve with vegetables of your choice, potato chips or tortilla chips. This dip is a low fat dip and can be made even more low fat by omitting the cheese.
