Sweet Spicy Barbecue Vegetable Satay (Vegan)
Serves 2 – 4

Cooking time 15- 20 minutes
Ingredients
For Barbecue marinade
- 1/2 cup finely chopped onion
- 2 tsp minced garlic
- 1 cup tomato ketchup
- 1/2 cup maple syrup or honey
- 2 tbsp lemon juice
- 1 tbsp worcestershire sauce
- 2 tsp paprika or red chilly powder
- 1 tbsp fresh or dried parsley
- 1 tbsp oil
- salt and pepper to taste
For Satay
- 3 cups bite size diced vegetables like broccoli, zucchini, baby corn mushrooms etc
- wooden skewers or toothpicks
Directions
In a wok heat oil add onions and garlic, saute until light golden. Next add the maple syrup or honey, ketchup, lemon juice, worcestershire sauce, paprika or chilly powder, parsley, salt and pepper. Stir for a minute and let cool. Thread the diced vegetables on the skewers and add the marinade on the skewered vegetables. Marinade the vegetables for an hour or two. The longer you marinade it the better it tastes. Grill the skewered vegetables in your oven on grill/ broil setting or you use a flat non stick pan and grill the vegetables. Serve hot. If you are vegan you can replace the honey or maple syrup with sugar in the marinade.
