Thyme

Thyme is also another important herb in Italian cooking. The leaves are green and roundish. The dried leaves look curled and are brown in color. Thyme has a warm and plungent flavor and fragrance. Unlike some other Italian herb it does not have an overpowering flavor, it blends with the flavor of the dish. Thyme is one of the herbs which retians almost all the flavor even after it is dried. 1/3rd of dried thyme is equivalent to 1 part of fresh thyme.
